Roasted Eggplant (Közlenmiş Patlıcan)

Easy roasted eggplant is a popular dish in Turkey. It is made by boiling eggplants until soft and then roasting them slowly over an open fire. This method helps soften the skin of the eggplants while retaining their natural flavor. As a result, this dish is very tender. In addition, the skin of the eggplant is removed before cooking so you get a smooth and creamy texture without any bitterness or roughness.

Ingredients

  • 3 eggplants

  • 2 cloves of garlic

  • 4 spoon strained yoghurt

  • 2 spoon mayonnaise

  • 1 teaspoon salt

  • For sauce
  • 1 teaspoon ground red pepper

Directions

  • First, wash and dry the eggplants. Pierce them with a knife in 3, 5 places.
  • Put the baking paper on the baking tray and place the eggplants.
  • Bake in a preheated oven at 200 degrees for approximately 30 minutes. (You can also roast the eggplants on the stove instead of in the oven. But in this case you will have to turn them constantly)
  • After the eggplants are cooked, let them cool down a bit and peel off their skins.
  • After peeling the skins, cutthe eggplants into cubes.
  • Add strained yogurt, garlic, salt and mayonnaise in a large bowl and mix.
  • Add the eggplants on it and mix.
  • You can take it on your serving plate. Garnish with red pepper flakes.
